If you're a mom that's anything like me, you have what I lovingly refer to as "mommy brain". I used to call it "pregnancy brain", but it's been about 7 years since I've been pregnant. I'm thinking I've overused that excuse by now... While I was planning this week's menu, my daughters requested sloppy_joes be added to the list. My sloppy joes are a cinch to throw together, so I happily added them. With all my organizing and planning, "mommy brain" took over and I forgot to pick up a couple cans of tomato soup, an essential ingredient. I tried to fake it by substituting tomato sauce for the tomato soup in what can only be called an epic failure. It was gross. Thankfully, I tasted it before I added the ick to the ground beef. Instead, I mixed together a couple cans of cream of mushroom soup, 2 tbs of onion soup mix and 2 cups of sharp cheddar cheese and threw it in with a couple lbs. of ground beef. I spread the mixture on hamburger buns and served baked fries on the side. It was a hit! Have I mentioned how picky my family can be? No? Well, they are... All 5 of us were pleasantly surprised by our new "Souper Joes". The best part, though? I served my family of 5 for $0.94 per serving! Oh, the joy of domesticity... Here's the recipe:
Souper Joes
2.25 lbs. ground beef
2 cans cream of mushroom soup
2 tbs onion soup mix
2 cups sharp cheddar cheese
hamburger buns, toasted
Brown ground beef over medium high heat. Drain.
Add soup and soup mix. Stir over low/medium heat until combined.
Add cheese and stir until melted.
Spread meat mixture on toasted buns. Serve. Yum!
