Easy Dinner Tonight! Creamy Italian Chicken

I sometimes get caught up in my blogging, emailing and bargain hunting and forget that I should probably get to dinner planning. Take today, for example. 8:00 a.m. suddenly turned into 12:15 and I realized that I had no idea what I was going to serve my family tonight... Here's what I rounded up:


Creamy Italian Chicken
4-5 boneless, skinless chicken breasts
1 envelope dry Italian dressing mix
1 can cream of chicken soup


Place chicken breasts in the bottom of slow cooker. I used 6 chicken breasts for my family, which will feed the 5 of us tonight and there should be enough left over for the husband to take to lunch tomorrow...


Combine the Italian dressing mix and the cream of chicken soup in a separate bowl.
Spread the soup mixture over the chicken breasts.

Set your slow cooker to High for 4-5 hours or low for 8-10 hours. When the chicken is done, shred with 2 forks and serve over cooked egg noodles or spaghetti noodles. AND, if you're really in the mood to pretend that calories don't matter, add about 1/2 block of cream cheese to the slow cooker for the last 1/2 hour of cooking. You won't be sorry... Yum!
